Best, Original Jamaican Jerked Chicken Grilled Cheese Sandwich

How Jamaican are you? Play this game first before you try this recipe!





















This sandwich is inspired by my Southern roots and Jamaican heritage. I was born in Buffalo, New York, but raised for 7 years in the small town of Polkton, North Carolina (Go Tarheels!) My parents are both born and bred Jamaican. My mom is from St. Mary. My dad is from Kingston... no really he is. Ive heard wannabes like to say they're from Kingston because its so well known, but he really is a city boy.
Anyway, I grew to LOVE grilled cheese sandwiches as a little girl in NC after the move from Buffalo.


What you'll need:
Jamaican hard dough bread
Jerked Chicken
Butter
Pepper Jack Cheese


Both the bread and Jerked chicken can be purchased from Golden Krust bakery. Or you can make your own jerked chicken by Googling a popular recipe and following the directions carefully.


















First start with Jamaican hard-dough bread.
butter both sides.
Heat a frying pan, Pam it or coat it with butter under medium high heat.












































Place sliced, Pepper Jack cheese in between the bread.
Make the grilled cheese sandwich.
I prefer dark golden brown and slightly burned. When done, lift off skillet.
Optionally you can toast the bread on both sides in the skillet or in a toaster oven.

Place preheated de-boned Jerked chicken inside of sandwich. heat up the chicken if it's cold in the microwave in the mean while.

If cheese hasn't fully melted, nuke open sandwhich in microwave for about 20 seconds on high.










Add jerk sauce or mayonnaise if you have no sauce or gravy.
for an EXTRA kick, take half a Habenero pepper and fry it until brown then glaze it inside the sandwich.

Belly Fat Blaster


So I purchased a bottle of L-Carnitine thinking it was vegan. I was so annoyed when I saw that the capsules were made of gelatin.
Know that whenever you see "gelatin" in the list of ingredients, assume it is from the snout-nosed, land scavenger, the oinker himself.
Kosher gelatin is derived from ocean vegetation such as kelp and other sea veggies. So instead of returning the bottle (becau$e I ordered it) and instead of trashing it (be¢ause I ordered it), I've been sprinkling the contents of the capsules in my yogurts. Maybe it wasn't intended to enter the system so abruptly, but I'm still alive, I don't feel jittery, and it is tasteless and odorless when mixed into the food. FYI L Carnitine is an emulsifier. It's the Dawny for your insides. Fat doesn't stand a chance! Don't want to buy it? Strapped for cash? Habanero Peppers rock when it comes to destroying fat. It melts it down so your body can discard of it.

Bananas and Oranges


So a few months back my mom's vegan cook buddy told her never to keep oranges and bananas in the same fruit basket because something in the oranges causes the bananas to spoil faster. Well, she was right. Just a few days after purchasing perfectly fine bananas, I placed a box of oranges next to them and a few on top of them. Not only did the fingers ripen, but they began to over ripen super fast and get blotchy in the areas where the oranges had rested.

Get one of those cool banana racks, and keep oranges in a separate bowl!

Wonderful Wheatgrass

Cleansing your fruits


If you don't have a commercial fruit and vegetable wash, then forget about using warm soapy water to cleanse your fruits. These can be especially difficult to wash, particularly, berries.

Instead, use salt or vinegar on tepid water to wash your fruits and veggies. Do a final rinse for good measure. I use the Sea Salt rather than the regular table salt for my regular cooking anyway, if at all. It has more nutritional value.

Very Berry Blueberry Loaf



This recipe follows the same recipe as the carrot cake recipe, except
you will be using 2 12 ounce packages of frozen blueberries.
Don't worry about the ice making the batter too watery. Also don't worry about the dark color that will result from mixing the blueberries. It will all bake out into a delicious fluffiness and complexion.

Why frozen blueberries? Well, they hold up really well when the time comes for everything to be blended. Your guests won't be biting into blueberry skins at you next event.

Bananas can be added to make it more dense, and for guilt-free grubbing, add a few sprinkles of ground flax meal and wheat germ. Add shredded coconut for a wonderful variation!

Carrot Cake: There is a recipe for Awesomeness!

This carrot cake is sure to please. I took a basic recipe and embellished it a little...ok
well maybe a lot.
This tastes so yummy, that I've been encouraged to make loaves and sell them.
What a compliment! Time to wow your friends :-)
This yields 5 - 7" pans of cake.

What you'll need:
4 cups of cake flour
2 teaspoons of salt
2.5 cups of oil
6 eggs
6 cups of shredded carrots
nuts (pecans or walnuts, I leave them whole you can chop them if you like).
raisins (optional)
2-8 ounce containers of whipped cream cheese
2 tablespoons of vanilla
dash of nutmeg
dash of cinnamon (I go a weee bit heavier)
shredded ginger (I LOVE ginger so I use the size of a fist but you can use less or more depending on your taste)
2- 4 tablespoons Pineapple trash. DO NOT just throw the pineapple in, the water will throw things off. Best method is to juice NOT blend the pineapple.

Cream cheese icing:
Whipped Cream cheese 2- 8 ounce containers
confectioners sugar
vanilla nutmeg

Options:
-Lazy? Pressed for time? Cake flour can be used to replace the flour and baking powder.
1 cup of butter is also optional.
-Buy premade icing
-Egg whites can be used to replace the 6 eggs. I usually eyeball it, but you can read the serving size of your favorite prepackaged egg whites. Or you can crack and skim the egg whites by hand.

grease your baking pan(s)
Combine all wet ingredients
Combine all dry ingredients in a separate container.
Bake for 350 degrees for 45 minutes or until golden brown


Ideas:
Use muffin tins and cupcake liners to make carrot cupcakes.
When cooled, slice and fry in a lightly buttered skillet for crispy slices (don't ice he cake before)
After frying, make a pb or cream cheese sandwich
